Quince Lattice Pie (Pasta Frola)

Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cups sugar
  • 2 tsp baking powder
  • 1 pinch of salt
  • 125 grs cold unsalted butter cut into bits
  • 1 egg + 1 egg yolk, slightly beaten
  • 1/2 tsp vanilla extract
  • 400 grs quince jam

Instructions
 

  • Sift together flour, sugar, baking powder and salt.
  • Rub in the butter until crumbly. Add the egg, yolk and vanilla, and form the dough.
  • Preheat oven to at 180°C/350°F. Grease and flour a 24cm/10-inch tart pan. Line the base and sides with ¾ of the dough. 
  • Mash the quince jam with the boiling water and fill the crust.
  • Roll out the rest of the dough, cut it into strips and weave a lattice top over the jam. Bake for 30-35 minutes and then let it cool. 

Notes

Tip:
To make cutting the strips easier, roll out the dough between 2 sheets of parchment paper and freeze it for 5 minutes. Then, remove the top paper, cut out the strips and place them on the pie to form the lattice.

This is an all-time classic pie that will never be outdated. Is there anything better than a cup of tea and a slice of nice quince pie in the afternoon? Besides, it is quite versatile, and it can be served at any time of day, which is why we wolf it down in a flash at home!

A lattice design is most traditional, but I love this pie so much that I like to give it my own personal touch, and when I have a little extra time, I cut out leaves to decorate it and make it look even prettier. To ensure that they do not shrink in the oven, it is important to freeze the cutouts for a few minutes before baking.

You can certainly use any other fruit jam of your choice besides quince, it is great with sweet potato, dulce de leche, or guava.

To make the crust, all you need to do is mix up all the ingredients and place the dough in and up the sides of a tart pan. Fill it with the jam that has been thinned down with some boiling water and mashed with a fork.
