
Almost anything zucchini recipe is delicious, but grilled is my favorite.
It makes a healthy, easy and quick side dish. This time I used the grill, but you can totally use a griddle. I served them with feta cheese, mint and a nice vinaigrette.

Grilled Zucchini

Ingredients
- Zucchini
- Feta cheese (or Parmesan, goat cheese, Brie or ricotta)
- Olive oil
- Salt and pepper
- Fresh herbs like mint, parsley or thyme (optional)
- For the vinaigrette:
- 1/4 cup olive oil
- 1/8 cup balsamic vinegar or lemon juice
- 1 tbsp Dijon mustard (or any other kind)
- Salt and pepper
Instructions
- Remove both ends of the zucchini. Cut lengthwise into 2 or 4 slices.
- Sprinkle with salt and pepper, and brush with olive oil (you can also use your hands).
- Heat a grill pan on medium-high heat. Sear the zucchini on both sides for about 3-4 minutes on each side. Serve with the cheese, herbs (optional) and the vinaigrette.
Notes
Tips:
- You can also serve them as a side dish for salads, meat, pasta, or together with other grilled vegetables.
- Cook them until tender and you can see the grill marks.
