
There is hardly anyone who doesn’t love apple cake, and if comes with walnuts and cinnamon, all the better! If you don’t happen to like cinnamon, you can totally omit it and it will be equally delicious.
It is very easy to make, and you can replace the apples with any fruit of your choosing. It is particularly good with blueberries.


The result is a spongy cake with tender apples, and the walnut topping is just amazing!
This is a great cake to serve at teatime, but you can also turn it into a desert by serving it with an ice cream scoop, whipped cream or yogurt.

Apple Cake
Ingredients
- 150 gr all-purpose flour
- 60 gr whole wheat flour
- 1 tsp baking powder
- 200 gr white sugar
- 140 gr unsalted butter at room temperature
- 2 eggs
- 1 tsp vanilla extract
- 120 ml milk
- 2-3 apples, thinly sliced
For the topping:
- 3 tbsp white sugar + ½ tsp cinnamon
- 1/2 cup chopped walnuts
- 2 tbsp unsalted butter, cut into small cubes
Instructions
- Preheat oven at 190°C/370°F. Grease and flour a springform 20cm/8 inches pan.
- Beat together all-purpose and whole wheat flour, sugar, butter, eggs, vanilla and milk until smooth and creamy. Pour the batter into the prepared pan and arrange the apple slices on top. Bake for 35 minutes or until the center is firm.
- Remove it from the oven, sprinkle with the cinnamon-sugar and walnuts, and top it with the butter cubes. Bake for another 20 minutes, or until a toothpick inserted in the center comes out clean.
