Valentine’s Vanilla Cake
Ingredients
For the cake:
- 120 ml milk + 2 tsp lemon juice
- 120 gr unsalted butter at room temperature
- 150 gr white sugar
- 2 tbsp vanilla extract
- 2 eggs
- 200 gr all-purpose flour, sifted
- 1 tsp baking powder
- 1/4 tsp baking soda
For the icing (optional):
- 1 cup powdered sugar, sifted
- 1 tbsp unsalted butter at room temperature a temperatura ambiente
- 2-3 tbsp boiling water
Instructions
- Preheat oven at 180°C/350°F. Grease and flour a heart-shaped pan (or any other).
- Mix milk and lemon juice and let it stand for 5 minutes.
- Beat butter on medium speed, gradually add the sugar and vanilla and beat for 3-4 minutes more. Add eggs, one at a time beating well after each addition. Sift together flour, baking powder and baking soda, and add them on low speed. Add milk and mix to combine. Do not over beat. Pour into the prepared pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean. Let cool and serve.
- For the frosting: Mix up all the ingredients and whisk until desired consistency.
Notes
Tips:
- You can use a 20-24cm (8-10 inch) pan, or make 12 cupcakes. Baking time will vary depending on the size of pan used.
