Tomato Carpaccio

A fresh, light and easy to make dish. The key is choosing large, sweet tomatoes, slice them very thinly, and serve them with a vinaigrette.

Tomato Carpaccio

Ingredients
  

  • 4 ripe tomatoes
  • 4 green onions, thinly sliced
  • 1 tbsp chopped cilantro
  • Olive oil, vinegar, salt and pepper

Instructions
 

  • Make the vinaigrette combining olive oil, vinegar, salt and pepper. Add the green onions and mix.
  • Thinly slice the tomatoes and place them on a serving platter, overlapping the slices. 
  • Drizzle with the vinaigrette, sprinkle with cilantro and serve!
