The peaches and almonds give this cake an incredible flavor. It is made with two different kinds of flour; it is super spongy and really delicious!
I love to make this type of cake to make use of the season’s amazing fruit! Whenever I make it, no one can get enough of it! This time I used peaches, but plums and apricots work perfectly as well.
There is no need to peel the fruit, so it is very quick to make, all you need to do is mix all the ingredients together, pour the bather into a pan, top it with peach wedges, pop it into the oven, and then sprinkle the top with sugar and bits of butter. This gives the cake an amazing sweet, crunchy top layer! Then 15 more minutes in the oven, and it is done!

Peach and Almond Cake
Ingredients
- 150 g unsalted butter, at room temperature
- 200 g white sugar
- 2 eggs
- 120 g whole milk (or yogurt)
- 150 g all-purpose flour
- 80 g almond flour
- 1 tsp baking powder
- 3 or 4 peaches, cut into wedges
Instructions
- Preheat oven at 190°C/375°F. Grease and flour a springform pan.
- Beat butter, sugar, eggs and milk until creamy. Add flour, almond flour and baking powder. Mix to combine.Pour the batter into the prepared pan and arrange the peach wedges on top. Bake for 40-45 minutes.
- Remove the cake from the oven and sprinkle it with sugar and some cubed butter. Bake for about 15 more minutes or until golden, and a toothpick inserted in the center comes out clean.
