I love this basic recipe for real vanilla flavored cake, especially for breakfast or teatime.
You can also add walnuts or zests, but I actually prefer the plain vanilla flavor!
I usually glaze this cake, but it is equally amazing dusted with powdered sugar or just on its own!
Another great option is using muffin cups for kids’ birthday parties, they love it! You just need to adjust the baking time.
To make sure your cake does not stick to the pan, it should be very well greased, or better yet, grease it with a brush to make sure you reach every corner of the pan. Then sprinkle it with flour, shake it, invert it and tap out the excess.

Real Vanilla Cake
Ingredients
- 120 ml milk + 2 tsp lemon juice
- 120 gr unsalted butter at room temperature
- 150 gr white sugar
- 2 tbsp vanilla extract
- 2 eggs
- 200 gr all-purpose flour , sifted
- 1/4 tsp baking soda
Instructions
- Preheat oven at 180ºC / 350ºF. Grease and flour a cake pan.
- Mix the milk and lemon juice and let stand for 5 minutes.
- Beat butter at medium speed, gradually add sugar and vanilla and continue beating. Add eggs, one at a time, beating after each addition. Reduce the speed, add flour, baking soda and finally, the milk. Mix to combine but do not overmix. Pour the batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool and serve.
- For the glaze: mix 1 ½ cups sifted powdered sugar + 1 ½ tbsp unsalted softened butter + 3 tbsp boiling water. Stir until desired consistency. If necessary, add a little more water or powdered sugar.
