Banana Cake

Whenever there are overripe bananas in the kitchen, this cake is a must do! It is super easy and so incredibly good!

Overripe bananas make this cake very sweet, spongy and moist. There is no need for an electric mixer, just mix all the ingredients and pop it right into the oven!

I bake this cake very often at home; sometimes I add walnuts for a crunchy touch or chocolate chips, but the truth is, that I actually prefer it plain, with its deep banana flavor!

I am sure you will also enjoy having a slice of this luscious banana cake with a cup of hot coffee!

Banana Cake

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 4 tsp baking powder
  • 2 eggs, slightly beaten
  • 3/4 cups vegetable oil
  • 1 tsp vanilla extract
  • 3 overripe bananas, mashed

Instructions
 

  • Preheat oven at 180ºC / 350ºF. Grease and flour a cake pan.
  • In a large bowl, mix flour, sugar and baking powder.
    Add eggs, oil and vanilla. Mix well to combine. Add mashed bananas and mix to combine.
  • Pour into the prepared pan and bake for about 45 minutes, or until a knife inserted in the center comes out clean.
