420gcherry tomatoes, cut in half lengthwise, or any other type of tomato
1red onion, chopped(or yellow onion)
100gspinach
A handful of basil leaves
2garlic cloves, chopped (optional)
4tbspolive oil
Salt and pepper
5cupswater
1cupParmesan cheese, grated
Instrucciones
In a large pot, place the dry pasta, tomatoes, onion, spinach, basil, garlic (optional), olive oil, salt and pepper. Add water and bring to a boil at medium heat.
Reduce the heat and cook for about 10 minutes stirring occasionally until almost all the water has evaporated. Add the Parmesan cheese, a handful of basil and drizzle with olive oil. Serve hot.
